Pumpkin Dessert

With all the fall ideas out there, I thought I would throw you another one. Jayson is NOT a fan of Pumpkin, and actually likes this one. It's a different twist on Pumpkin Pie. If any of you have heard of this recipe, it is usually made with a vanilla cake mix, and no nuts or oatmeal. I love the addition of spice cake...and anything is better with nuts! :)

PUMPKIN DESSERT:
Crust:
1 pkg spice cake mix
1/2 C. melted butter
1 egg
1/2 quick oats
1/2 C chopped nuts
Combine in bowl, Reserve 2/3 C for crumble topping. Press into greased 9x13 pan.

Filling: Pour over pressed crust
1 Lg. can Libbys Pumpkin Pie Mix (26 oz)
1 Can Evaporated Milk
2 eggs - slightly beaten
1 Tbls. Pumpkin Spice Mix

Topping: Sprinkle over pumpkin topping
2/3 C reserved crumble
1/2 C Sugar
3 tsp. cinnamon
1/4 C quick oats
1/4 C Chopped nuts

Bake at 350 for 45 min. Let cool for one hour. Serve or refrigerate for later
